DAL KHICHDI

Preparation time : 10 mins

Cooking time: 15 mins

Serves: 2

INGREDIENTS:

  • Rice : 1 cup
  • Dal : 3/4 cup
  • onions: 1 finely chopped
  • tomato: 1 finely chopped
  • cumin seeds: 1 tsp
  • Asofetida:1/2 tsp
  • green chilli : 1 finely chopped
  • coriander leaves: few chopped
  • dry round red chilli : 2
  • turmeric powder: 1/2 tsp
  • garlic : 5 to 6 cloves crushed
  • salt: for taste
  • vegetable oil

PREPARATION:

  • In a pressure cooker , cook together rice, dal, garlic, salt, green chillies and turmeric powder.
  • Cook until the rice and dal is cooked well, mash it with the spoon laddle and keep aside.
  • Heat oil in a wok, add cumin seeds, dry red chilli , asoefetida and saute .
  • Add onion and saute till it becomes translucent.
  • Add tomatoes and cook till it turns mushy.
  • Add salt and turmeric powder .
  • Add the cooked rice and dal into the wok and cook for 5 mins.
  • Garnish with coriander leaves.

Spinach stir fry with corn balls

Preparation time : 10 mins

Cooking tine : 25 mins

Serves : 4 to 5

INGREDIENTS:

  • Spinach leaves: 1 bowl finely chopped
  • Corn kernels: 1 cup
  • Refined flour/maida: 1tbsp
  • Cheese grated: 1tbsp
  • Green chillies: crushed 2
  • Ginger garlic paste: 1 tsp
  • Salt: for taste
  • Turmeric powder: 1/2 tsp
  • Garam masala powder: 1tsp
  • Cumin seeds: 1/2 tsp
  • Onions: 1 large finely chopped
  • Tomato: 1 finely chopped
  • Oil
  • Coriander leaves: for garnishing

PREPARATION:

To make corn balls: 

  • Coarsely grind corn kernels.
  • In a bowl add ground corn ,crushed green chilli,salt,cheese and refined flour.
  • Make small round balls .
  • Deep fry till golden brown.

For spinach stir fry : 

  • Heat oil in a wok , add cumin seeds and let it splutter.
  • Add onions and ginger garlic paste and saute till it turns translucent.
  • Add tomatoes and saute till it turns mushy.
  • Add salt,turmeric powder and garam masala powder and mix well.
  • Add chopped spinach leaves and saute for 7 to 8 minutes.
  • Garnish with coriander leaves.

Dahi Vada

Preparation time : 8 hours

Cooking time : 15 mins

Serves: 4

INGREDIENTS:

For Batter: 

  • Urad dal: 1/4 kg
  • Water

For Vada:

  • Mint chutney :2 tbsp
  • Imli chutney: 2 tbsp
  • Red chilli powder: 1/2tsp
  • Salt:for taste
  • Baking soda: 1/4 tsp
  • Chaat masala:1/2 tsp
  • Green chillies: 1 finely chopped
  • Oil: for deep frying

PREPARATION:

  • Soak urad dal in water overnight or for 8 hours.
  • Drain and grind it to a smooth and thick paste.
  • Add green chillies,salt and baking soda into the batter and mix well so that the batter becomes fluffy.
  • Heat oil in a pan, make medium sized dumplings of batter and deep fry till it becomes golden brown.
  • After frying soak the vadas in water for 15 mins.
  • Remove it from water and completely squeeze water from the vadas .
  • While serving add yogurt at the base. Immerse vada into it and add more yogurt from top.
  • Top it with mint chutney and imli chutney.Sprinkle chilli powder and chaat masala and serve.

Cheese corn balls

Serves: 4 to 5

INGREDIENTS:

  • Corn kernels : 1 big bowl
  • Potatoes: 2 boiled
  • All purpose flour/maida: 2 tbsp
  • Mozarella cheese : 1 cup grated
  • Coriander leaves : 1tbsp finely chopped
  • Green chillies : 1 finely chopped
  • Butter: 1tbsp
  • Milk: 1cup
  • Salt: for taste
  • Corn flour: 2tbsp
  • Oil: for deep frying

PREPARATION:

  • Boil corn kernels, drain and keep aside.
  • Boil and mash potatoes.
  • Heat butter in a pan, add maida and milk and stir continously till it thickens.
  • Turn off the flame and add corn kernels,mashed potatoes,coriander leaves ,green chillies ,cheese and salt.
  • Mix well and make small round dumplings.
  • Roll it over corn flour and deep fry it.
  • Serve hot with ketchup or mint chutney.

Corn Mayo Tarts

Preparation time : 15 mins

Serves : 8 to 10

This is a very easy to prepare recepie. This can be made quickly for evening snack or any kids party.

INGREDIENTS:

  • Tarts: 1 packet
  • Mayonaise : 1 big bowl
  • Cabbage :finely chopped 1 medium size bowl
  • Carrot: finely chopped 1 medium size bowl
  • Corn kernels : boiled 1 bowl

PREPARATION:

  • Mix together all ingredients in a bowl.
  • Arrange tart in a tray and fill it with mayo mix.

Mysore Bhajji

Serves : 4

INGREDIENTS :

  • Maida : 1 cup
  • Rice flour : 2 tbsp
  • Curd: 1 tbsp
  • Chilli powder: 1 tsp
  • Baking soda : 1/2 tsp
  • Green chillies chopped : 1
  • Coriander leaves finely chopped : 1 tsp
  • Cumin seeds : 1/2 tsp
  • Salt : for taste
  • Oil : for deep frying

PREPARATION:

  • Mix all the above ingredients together except oil.
  • Add little water if needed.
  • The consistency should be thick .
  • Heat oil in a wok.
  • Take small dumplings of batter in hand and drop it into oil.
  • Deep fry it.

Sweet n Sour Veg Salad

Serves : 4

INGREDIENTS:

  • Cabbage: vertically chopped 1 cup
  • Carrot : grated into thick slices 1 cup
  • Capsicum : 1 chopped
  • Onion : 1 chopped
  • Cucumber : 1 big cubed
  • Dried Thyme : 1/2 tsp
  • Black pepper powder: 1 tsp
  • Apple cider vinegar : 2 tsp
  • Honey : 2 tsp
  • Olive oil : 1 tsp
  • Salt : for taste
  • Mayonaise : for topping

PREPARATION :

  •  Mix together all the above ingredients except mayo and toss well.
  • Add mayo as topping on top while serving.
  • Tip : You may add veggies of your choice.
