Chickoo n dry fruits Smoothie

Preparation time : 10 mins

Serves: 3

INGREDIENTS:

  • Chickoo: 5 to 6
  • Dates: 4 to 5
  • Cashews: 5 to 6
  • Almonds : 5 to 6
  • Walnuts: 2
  • Milk: 1/2 cup
  • Powdered cinamon: 1/4 tsp
  • Ice cubes: few

PREPARATION:

  • Peel off skin of chickoos and cut it into small pieces.
  • In a mixer blend together all ingredients to a smooth consistency.
  • Grate walnuts and top it on top and sprinkle little cinnamon powder and serve.

Sweet Corn Chicken Soup

Preparation time : 10 mins

Cooking time : 10 mins

Serves : 4

INGREDIENTS :

  • Corn kernels : 1 cup
  • Boiled chicken pieces : 1/ 2 cup
  • Egg : 1
  • Corn flour : 2 tbsp
  • Salt: for taste
  • Pepper powder: 2 tsp
  • Soya sauce : 1 tsp
  • Vinegar: 1 tsp

PREPARATION:

  • Boil chicken pieces , drain and keep the stock aside.
  • In a vessel add the chicken stock.
  • Add corn kernels and chicken pieces let it boil for 2-3 mins.
  • Add corn flour and mix well.
  • Add water to make the consistency of soup neither too thick nor watery.
  • Add egg in a strainer and pour it into the soup through strainer.
  • Boil for some time.
  • Add soya sauce , vinegar, salt and peooer powder.
  • Boil for 5 mins and serve hot.

Spinach stir fry with corn balls

Preparation time : 10 mins

Cooking tine : 25 mins

Serves : 4 to 5

INGREDIENTS:

  • Spinach leaves: 1 bowl finely chopped
  • Corn kernels: 1 cup
  • Refined flour/maida: 1tbsp
  • Cheese grated: 1tbsp
  • Green chillies: crushed 2
  • Ginger garlic paste: 1 tsp
  • Salt: for taste
  • Turmeric powder: 1/2 tsp
  • Garam masala powder: 1tsp
  • Cumin seeds: 1/2 tsp
  • Onions: 1 large finely chopped
  • Tomato: 1 finely chopped
  • Oil
  • Coriander leaves: for garnishing

PREPARATION:

To make corn balls: 

  • Coarsely grind corn kernels.
  • In a bowl add ground corn ,crushed green chilli,salt,cheese and refined flour.
  • Make small round balls .
  • Deep fry till golden brown.

For spinach stir fry : 

  • Heat oil in a wok , add cumin seeds and let it splutter.
  • Add onions and ginger garlic paste and saute till it turns translucent.
  • Add tomatoes and saute till it turns mushy.
  • Add salt,turmeric powder and garam masala powder and mix well.
  • Add chopped spinach leaves and saute for 7 to 8 minutes.
  • Garnish with coriander leaves.

Dahi Vada

Preparation time : 8 hours

Cooking time : 15 mins

Serves: 4

INGREDIENTS:

For Batter: 

  • Urad dal: 1/4 kg
  • Water

For Vada:

  • Mint chutney :2 tbsp
  • Imli chutney: 2 tbsp
  • Red chilli powder: 1/2tsp
  • Salt:for taste
  • Baking soda: 1/4 tsp
  • Chaat masala:1/2 tsp
  • Green chillies: 1 finely chopped
  • Oil: for deep frying

PREPARATION:

  • Soak urad dal in water overnight or for 8 hours.
  • Drain and grind it to a smooth and thick paste.
  • Add green chillies,salt and baking soda into the batter and mix well so that the batter becomes fluffy.
  • Heat oil in a pan, make medium sized dumplings of batter and deep fry till it becomes golden brown.
  • After frying soak the vadas in water for 15 mins.
  • Remove it from water and completely squeeze water from the vadas .
  • While serving add yogurt at the base. Immerse vada into it and add more yogurt from top.
  • Top it with mint chutney and imli chutney.Sprinkle chilli powder and chaat masala and serve.

Squid Masala

Preparation time: 15 mins

Cooking time : 30 mins

Serves: 4 to 5

INGREDIENTS:

  • Squid : 1/2 kg
  • Onions: 2 chopped vertically
  • Tomatoes: 2 roughly chopped
  • Green chillies : 2
  • Ginger: 1 tsp finely chopped
  • Garlic: 6 cloves crushed
  • Curry leaves: few
  • Red chilli powder: 2 tbsp
  • Pepper powder: 2 tsp
  • Turmeric powder: 3/4 tsp
  • Fennel seeds: 1/2 tsp
  • Mustard seeds: 1/2 tsp
  • Coconut oil
  • Salt: for taste

PREPARATION:

  • Clean squid properly and cut it into small rings.
  • Marinate it with chilli powder, pepper powder,turmeric powder,salt,curry leaves and coconut oil. Keep aside for 10 mins.
  • Deep fry the squid until it gets half cooked.
  • Heat oil in a wok, add mustard seeds,let it splutter then add fennel seeds,green chillies ,ginger and garlic.Saute for a minute.
  • Add onions and little salt and saute until it turns golden brown.
  • Add tomatoes and saute until it turns mushy.
  • Add all dry spice powders,sprinkle little water and mix well.
  • Now add fried squid to this ,mix well.
  • Add 1/4 cup of water and close and cook for 15 mins.
  • Garnish it with curry leaves.
