SOYA CHUNKS CHILLI

Ingredients:

  • Soya chunks- 1 bowl 
  • Onion-1 large
  • Capsicum-2 
  • Corn flour-2 tbsp
  • Soya sauce-2 tbsp
  • Red chilli sauce-2 tbsp
  • pepper powder-1 tsp
  • ginger garlic paste-1 tsp
  • garlic chopped-1 tsp
  • salt-for taste
  • oil

Method:

  • Soak soya chunks in hot water for 5 mins.Drain and squeeze water and keep aside.
  • Make batter using cornflour ,soya sauce,ginger garlic paste and salt and little water.
  • Dip soya chunks in this batter and deep fry it .
  • Keep the fried soya chunks balls aside.
  • Heat oil in a wok.Add oil .Add chopped garlic and saute.
  • Add onion and capsicum and stir for sometime.It should not become mushy, it should remain crisp.
  • Add pepper powder and salt.Add soya sauce and chilli sauce and mix well.
  • Mix 1/2 tsp corn flour with little water and add it to the wok and mix well.
  • Add the fried soya chunks balls n mix it well.
  • Garnish it with spring onion leaves. 

VEGETABLE CUTLET

Ingredients:

  • Beetroot Grated- 2
  • Carrot grated-2
  • Potato ,boiled and smashed-2
  • red chilli powder-1 tsp
  • turmeric powder-1/2 tsp
  • pepper powder-1 1/2 tsp
  • garam masala powder-1 tsp
  • cumin powder-1/2 tsp
  • salt-for taste
  • eggs-2
  • bread crumbs-1 bowl
  • oil-for deep frying

Method:

  • Heat oil in a pan.Add grated beetroot and carrot and saute until the raw smell goes.
  • Add all the spice powders mentioned above, mix well.
  • Add smashed potatoes and mix well.
  • keep the mixture aside and let it cool.
  • Make small balls and flatten it to oval shape.
  • Dip it first in egg and coat it in bread crumbs evenly and deep fry.
  • Serve with tomato ketchup or mint chutney.

SOYABEAN BIRIYANI

Ingredients:

  • Basmati rice- 1 cup
  • Soya chunks-1 cup
  • Ginger garlic paste-2 tsp
  • Cumin seeds-1/2 tsp
  • Onions -1 large finely sliced
  • Tomatoes-1 finely chopped
  • green chillies-1 vertically slit
  • turmeric powder-1/2 tsp
  • Chilli powder-2 tsp
  • Garam masala powder-1 tsp
  • Cumin powder-1/2 tsp
  • salt-for taste
  • Mint leaves- few
  • Coriander leaves-few
  • Curd-1 tsp
  • Oil

Method:

  • Soak rice for 15 to 20 mins.Boil little water and soak soya chunks for 5 mins. Squeeze the water and keep aside.
  • Heat oil in a vessel add cumin seeds,let it splutter.Add ginger garlic paste, saute until the raw smell goes.
  • Add onions and saute till translucent add turmeric powder,chilli powder,cumin powder,salt and mix well.add little water so that the spices blend well.
  • Add tomatoes and saute until it turns mushy.
  • Add soya chunks and mix.Add water and cook for some time.
  • Add garam masala powder, little curd ,mint leaves and coriander leaves and mix well.
  • Layer the soaked rice on top of this and close and cook until the rice gets cooked.
  • Open once done and mix well.Add little lime juice.

BOONDI RAITA

INGREDIENTS:

  • Curd-1 cup
  • Sugar-1/2 tsp
  • Salt-for taste
  • Cumin powder-1/2 tsp
  • Chilli powder-1/2 tsp
  • Boondi – 1/2 cup 

Method:

  • Beat curd with little water until there is no lumps.
  • Add sugar,salt,cumin powder,chilli powder and mix well.
  • Add boondi n mix before serving.
  • You can even serve it after refrigerating for sometime.

Custard Fruit Salad

Ingredients:

  • fruits of your choice- I used aplles,pear,papaya,poemogranate.
  • milk-1/2 cup
  • custard powder-2 tbsp (any flavour, I used raspberry)
  • vanilla icecream-2 scoops
  • cherries
  • honey-2 tsp

Method:

  • cut all fruits into small pieces .
  • Add all fruits into a bowl,add honey, vannila icecream, cherries and mix well.
  • heat milk and add custard powder and stir continuously until theres no lumps.
  • let it cool and add it to the fruits.
  • refrigerate and serve.

Spicy Corn Soup

Ingredients: 

*Fresh corn kernels -1 bowl

*corn flour-1tbsp

*soya sauce- 1tbsp

*pepper powder-2tsp

*dried oregano-1tsp

*salt-for taste

*butter-2 tbsp

*bread cubes-for garnishing

Method:

*Grind fresh corn kernels into smooth paste.  keep few fresh kernels aside. 

*heat a vessel and add butter. Add oregano n few fresh corn kernels. 

*Add ground corn paste and add water. 

*Add corn flour paste and stir. Add salt and pepper powder and mix. 

* Let it boil for sumtym.  add fried bread crumbs on top and serve hot.
